The man mixing Cheval Blanc’s cocktails

Rory Eaton, assistant manager and mixologist at the soon-to-open Cheval Blanc wine bar, has told of his passion for his trade.

Rory, 22, who’s just finished his sociology degree at Nottingham Trent University, has years of experience in the business.
He describes his new post as his ‘dream job’.
The cocktail list will be seasonal.
Rory’s first list includes drinks such as English Rose, with gin, elderflower and rose, and Chinatown, made with whisky, vermouth, peach and ginger.
He explained explained: “I’ll constantly be researching what fresh and interesting ingredients are available and what the current trends are in cocktail-making.
“Like the wines at Cheval Blanc, the cocktails will be interesting and will have a story behind them.
“They’ll have a slant. Like an Old-Fashioned that will be made with gin rather than whiskey.
“We’re looking for drinks that will work well with the small plates we’ll be serving. We’ll be looking for drinks to suit lots of different tastes – long and short drinks, though, personally, I find short drinks more interesting.”
He said he’d been interested in cocktails and drinks in general for a long time and spent time before I was a student picking grapes in France.
Then he applied for a job as a barman at a bar-restaurant chain in Broad Street, but was offered work as a waiter.
“I accepted that job but pestered them until they eventually let me work behind the bars and I began mixing cocktails. It was a great learning curve,” he added.
“Then I moved to the Mo-Tiki Bar at the Prince of Wales, which provided fantastic experience. It was loads of fun learning and developing new cocktails.
“It’s so much more rewarding to work for an independent rather than a big company. There is more freedom and commitment to what you’re doing.
“This is a fantastic opportunity for me and I’m looking forward to the challenge.
“The reward is seeing people sitting enjoying the drinks we’ve served them.”
