The Edgbaston appoints a new head chef

Posh cocktail bar and boutique hotel The Edgbaston has appointed a new head chef.

Olivier Briault was, formerly pastry chef of nearby Simpsons Restaurant and Opus Restaurant in Birmingham city centre.

His father and grandfather are both pastry chefs, with his father giving him his first apron and hat when he was three.

Olivier gained experience in various pastry schools in France then decided to move to the UK to further his passion.

Afternoon Tea at The Edgbaston has been drawing in guests since May and Olivier plans to take it to the next level.
He said: “The look on someone’s face when they have a first bite of a fantastic dessert is priceless. So whatever I make I put my heart and soul into it. It helps that I have a sweet tooth and adore anything made of chocolate and sweet.”

Afternoon Tea is served daily from 12 noon until 6pm and reservations are essential.
