Salt & Earth’s pop-up at 1000 Trades will be the last chance to try its trailblazing cuisine – for chef Niki Astley is leaving Birmingham.
Niki, who ran the critically-acclaimed Two Cats Kitchen in the Jewellery Quarter before deciding to concentrate on Salt & Earth, is embarking on a new challenge away from the city, but isn’t yet revealing his next venture.
He told me: “I’ve been here five years now and haven’t stayed more than three anywhere since I was 17.
“There’s not going to be a better time to spread wings and do something freewheeling.
“I’m really looking forward to the final stint in Birmingham.
“The menu and theme will change a lot. We’ll have a series of accessible core items, like fried chicken, a steak dish and pasta, but at the same time will chop and change. It will be a lot of fun.”
Salt & Earth’s month-long residency will run lunchtimes and evenings from February 5 until March 3 at 1000 Trades.
It will be casual dining in a space known for its organic wines, craft beer, innovative pop-ups and other events.
Salt & Earth has won many fans for its eclectic mix of street food plates and fine dining dishes, often influenced by Latin American and Japanese food.
At 1000 Trades, he will be inviting selected chefs to join him and offer one of their own dishes on various days.

Fifty per cent of the seats at Salt & Earth’s residency at 1000 Trades will be available for booking, with the rest open for walk-ins.

Niki and his team will be serving food between 12-4pm and 5pm until close each day.
